This toast gives a very gentle profile with a vanilla character and exotic fruit notes. It brings volume and softness with fruity notes. The medium convection toasting frees large quantities of aromatic compounds, in particular with the US oak, giving structure, softness and volume
It is mainly used during ageing and generally associated with French oak. The main objective is to add olfactory softness (vanilla notes) and improve fruitiness. An excellent choice for reds associated with yeast-derived products to improve the fruity profile.
