HOP™ a été sélectionnée en collaboration avec l’INRAE (Institut National de Recherche pour l’Agriculture, l’Alimentation et l’Environnement) dans le cadre d’un projet Européen Marie-Curie nommé «YEASTCELL ». L’objectif principal de ce programme de recherche était de comprendre et d’optimiser la résistance levurienne aux stress induits lors d’une inoculation directe dans les moûts sans réhydratation préalable. Grâce à une méthode de sélection novatrice, non productrice d’OGM, basée sur la capacité des levures à évoluer en conditions de stress extrêmes de vinification, HOP™ a été sélectionnée et s’est distinguée en présentant un profil génétique unique lui conférant une structure membranaire cellulaire renforcée et de multiples caractéristiques de résistance. L’intégrité ultra-renforcée de sa membrane permet à HOP™ de surmonter des conditions difficiles et ce, de l’inoculation jusqu’à la fin de la FA, tout en maintenant une très haute viabilité.
