Caractéristiques

SELECTYS® L'ÉCLATANTE est une levure S.cerevisiae sélectionnée pour l'élaboration de vins blancs et rosés aromatiques, très intenses aux arômes stables dans le temps.

Le profil aromatique des vins vinifiés avec SELECTYS® L'ÉCLATANTE est complexe, alliant à la fois arômes variétaux et arômes fermentaires. Elle permet une révélation optimale des arômes variétaux thiols et terpènes grâce à son pool d'activités enzymatiques.

L'ÉCLATANTE développe également des arômes de fruits et de fleurs durant la fermentation alcoolique et s'adapte ainsi à une grande variété de cépages neutres ou aromatiques. C'est la maturité phénolique des raisins qui orientera le profil aromatique du vin vers des arômes plus frais et végétaux ou vers des arômes plus exotiques et mûrs.
