Caractéristiques

ACIDE TARTRIQUE est un acidifiant des moûts ou des vins. Il est aussi employé pour affranchir les cuves en ciment. L’acidification n’est autorisée que dans certaines zones viticoles de l’Union Européenne. En théorie, 100 g/hL d’ACIDE TARTRIQUE augmentent l’acidité, exprimée en H2SO4, de 0,65 g/L. En pratique, le rendement, variable, est plus faible.

Sur moût ou raisin: 150 g/hL (maxi légale);sur vin: 250 g/hL (maxi légale)
