Caractéristiques
La quercétine est un flavonol dont la fonction principale est de protéger la plante contre les  stress abiotiques.
La précipitation de la quercétine dans les vins, en raison des stress climatiques récurrents, devient un problème de plus en plus global. Ces précipitations pourraient, dans les prochaines années, affecter un grand nombre de variétés.  
Pour limiter cette précipitation en bouteille, il est donc primordial d’intervenir en amont  sur ce complexe de molécules. 

SPECTRA® QF est une préparation enzymatique concentrée et microgranulée à base de pectinase d’Aspergillus Niger. Ses propriétés lui permettent de libérer la quercétine liée, conduisant ainsi à la précipitation de cette dernière.  
Dose d'emploi : 
​De 3 à 10 g/hL, suivant la teneur en quercétine liée, du temps de contact et de la température.
