Caractéristiques

Pour croître, les micro-organismes ont besoin de substances nutritives (eau et carbone apportés principalement par les sucres, les acides aminés et certains minéraux), de facteurs de croissance, notamment pour les levures de vitamines (thiamine, biotine, acide pantothénique, etc...), mais aussi de conditions physicochimiques particulières (température, pH, aération).

Applications
Plus rapide et plus complète avec NUTRIMENT S, la fermentation alcoolique s’accompagne alors d’une production d'acidité volatile plus faible.

• Dans le cas de vendanges abîmées :
Une fermentation rapide permet de séparer plus rapidement le jus des rafles afin de limiter le plus possible les risques d'oxydation, et d'obtenir un maximum de substances aromatiques.
 
• En reprise de fermentation :
Lors d’une fermentation languissante ou d’un arrêt de fermentation, l’addition de NUTRIMENT S avec les levures finisseuses est tout à fait recommandée.
