Caractéristiques

Cette cellulose est une cellulose purifiée partiellement dépolymérisée. Elle est obtenue par traitement acide de l’alpha-cellulose provenant exclusivement de bois non résineux garantissant une origine non OGM.

La cellulose microcristaline est totalement insoluble dans les moûts et par conséquent est considérée comme au auxiliaire technologique au regard de la législation. Classée par l’OIV dans la catégorie des activateurs de fermentation, la cellulose microcristalline  ne permet pas de compenser une carence nutritionnelle de Saccharomyces Cerevisiae, mais sa capacité à détoxifier le milieu en favorisant la nucléation du CO2,  permet un bon déroulement de la fermentation alcoolique.      
Applications
La cellulose microcristaline peut être utilisée pour deux applications :
  • La correction du niveau de turbidité d’un moût trop débourbé
  • La détoxification du milieu par sa capacité à améliorer significativement le dégagement du gaz carbonique durant la fermentation alcoolique et ainsi améliorer la qualité de fermentation des levures.
