Caractéristiques
L’ACIDE FUMARIQUE est un acide organique naturellement présent dans les vins. C’est un diacide car il possède deux fonctions carboxyliques. Acide fumarique L’une de ces propriétés est d’inhiber ou bloquer les fermentations malolactiques à une certaine concentration. C’est donc un outil de choix pour limiter l’utilisation du SO2 qui était jusque-là utilisé pour cette action.
Applications
L’ACIDE FUMARIQUE se prépare dans 20 fois son poids de vin. Il est ensuite incorporé au vin lors d’un remontage d’un demi-volume de la cuve. Pour une meilleure solubilisation il est fortement conseillé de réaliser cette manipulation sur un vin dont la température est supérieure à 10°C. Précaution d’utilisation : Produit pour usage œnologique et exclusivement professionnel. Utiliser conformément à la réglementation en vigueur.
