SELECTYS® LA PERLA is a Saccharomyces cerevisiae strain isolated from a New World Chardonnay vineyard. It was identified by the SOFRALAB® Group’s Innovation, Research & Development department by means of a traditional selection programme assessing a series of strains for their fermentative, analytical and organoleptic performance.
SELECTYS® LA PERLA was chosen for:
- its fermentation capacity;
- its propensity to reveal lemony aromas in white
grape varieties, promoting a fresh, fruity profile
while retaining the elegance and roundness
required for this profile of white wine.
- Ideal for producing Chardonnay white wines with fresh, fruity notes.
- Ensures safe fermentation with regular kinetics.
- Suitable for fermenting all varieties of white grapes.

- Recommended AF temperature : 14 – 18°C

The nutritional requirements of SELECTYS® LA PERLA are low to medium depending on the matrix. However, adequate amino acid nutrition at the start of fermentation is recommended to enhance the desired aromatic profile.
