Caractéristiques

LYSIS® ULTRA est une préparation enzymatique liquide très concentrée en activités pectinases et en activités secondaires de type cellulase et hemicellulase. Cette enzyme permet d’abaisser très rapidement la viscosité et la turbidité des moûts et agit à basse température (<10°C) et à pH bas (des 2,8).

LYSIS® ULTRA s’emploie sur moûts blancs difficiles à clarifier, présentant une peau épaisse et une faible maturité. LYSIS® ULTRA est également préconisée pour la flottation.

  • Débourbage des moûts blancs difficiles à clarifier, présentant une peau épaisse et une faible maturité. Recommandé notamment dans les vignobles septentrionaux tels que le Val de Loire et l’Alsace
