Caractéristiques
La présence de Brettanomyces et leur développement reste un sujet de préoccupation dans de nombreux sites de production. L’augmentation des pH, la diminution des doses de SO2 favorisent leur multiplication.
OENOVEGAN® MICRO permet de contrôler le développement et de diminuer la population de Brettanomyces grâce à sa formulation spécifique à base de chitosan. Le chitosan est un dérivé de la chitine contenu dans la paroi cellulaire d’Aspergillus niger, il permet de contrôler le développement de la plupart des micro-organismes d’altération des vins.
Produit de collage sans dérivés d’origine animale, il peut tout à fait s’inscrire dans une démarche Végan.
Applications
OENOVEGAN® MICRO peut s’utiliser sur tous types de vins. De part son action sur les micro-organismes, il est impératif d’attendre la fin de la FA ou de la FML avant son utilisation.
Dans le cas d’une utilisation sur un vin de base avant prise de mousse, un délai de tirage de 3 semaines devra être observé pour s’assurer d’un bon développement des levures en 2nde fermentation.
