Caractéristiques

La souche SELECTYS® ITALICA CR1 a été isolée en 2008 en Italie sur raisins rouges passerillés sur le cépage Corvina et provenant des meilleurs vignobles de la Valpolicella destinés à la production
du vin Amarone.
Due à son origine, SELECTYS® ITALICA CR1 a un fort pouvoir osmotolérant( > 300 g/l de sucres), même si elle est inoculée à très basse température, <10 °C.
Sa fermentation est régulière et, sans production d'écume.
Les exigences nutritionnelles exprimées en azote assimilable sont faibles à modérés, toutefois nous recommandons une nutrition azotée appropriée avec VIVACTIV PREMIER surtout si le degré alcoolique potentiel est très élevé.

Applications

SELECTYS® ITALICA CR1 est une levure adaptée à la production de vins rouges à fort potentiel alcoolique. Elle réussit toujours à valoriser les caractéristiques aromatiques typiques des cépages et du terroir sans masquer les arômes variétaux. Elle respecte le cadre polyphénolique des vins rouges sans diminuer la couleur.
Une production élevée de glycérol et la libération dès les phases finales de la fermentation de polysaccharides pariétaux garantissent un apport positif à la rondeur en bouche.

Ce produit peut être ajouté directement sans nécessiter de réhydratation préalable : il est DROP&GO !
