Caractéristiques

KYOCELL est une gomme de cellulose (E466) destinée à la stabilisation des vins vis-à- vis du bitartrate de potassium. KYOCELL est élaborée à partir de cellulose extraite du bois. Ses caractéristiques principales, viscosité, degré de polymérisation et degré de substitution, sont particulièrement adaptées à l’œnologie. KYOCELL existe sous forme granulée et sous forme liquide.

Applications

KYOCELL est apportée :

  • Au moment du tirage pour les vins effervescents.
    Au tirage des essais d’efficacité doivent être réalisés en tenant compte de la perte due à la bentonite de l’adjuvant de remuage. (Consulter votre oenologue)
  • Avant la mise en bouteille des vins blancs, stabilisés au préalable vis-à-vis des casses protéiques, KYOCELL peut être apportée avant la filtration finale. L’étape d’homogénéisation est capitale afin d’éviter d’éventuels problèmes de colmatage et pour obtenir la meilleure protection possible. Un délai de deux jours est conseillé entre l’apport de KYOCELL et la filtration finale
  • Avant la mise en bouteille des vins rosés. Il est nécessaire de vérifier au préalable que l’ajout n’a aucune incidence sur la couleur des vins. (Consulter votre oenologue)
  • Ne pas utiliser sur un vin traité au lysozyme
