Caractéristiques
La séparation des phases solides et liquides lors de la phase pré-fermentaire reste un enjeu prioritaire dans l’oenologie.
L’utilisation de produit allergène devient une contrainte forte pour les vinificateurs. Depuis plusieurs années, OENOFRANCE a consacré du temps et de la recherche pour proposer une solution alternative d’origine végétale non-allergène.
OENOVEGAN® F a été développé pour la clarification des moûts blancs et rosés.
OENOVEGAN® F ne contient pas de substances protéiques animales ce qui permet son utilisation dans les vins destinés aux consommateurs végans .
OENOVEGAN® F permet d’obtenir une flottation de qualité tout en préservant les caractéristiques variétales du moût.
Les protéines végétales constitutives d’OENOVEGAN® F sont obtenues à partir de protéines de légumineuses et de dérivés de chitine d’Aspergillus Niger.
Applications
Il est nécessaire de dépectiniser le moût environ deux heures avant la flottation.
 
Les préparations enzymatiques pectolytiques conseillées pour cette étape sont :
  • LYSIS UC à la dose de 0,5 g/hL à 2 g/hL
  • LYSIS IMPACT à la dose de 2 mL/hL à 4 mL/hL.
 
OENOVEGAN® F est un produit liquide, il peut s’utiliser en ajout direct au moût à flotter. 
Ce produit peut être ajouté directement sans nécessiter de réhydratation préalable : il est DROP&GO !
