Caractéristiques

PHYLIA® EXEL résulte d'un procédé d'autolyse partiel permettant l'obtention de polysaccharides (dont mannoprotéines) et de protéines. PHYLIA® EXEL interagit fortement avec la matrice du vin diminuant la dureté des tanins sur les vins rouges et atténuant l'acidité sur les vins blancs et rosés.

Employé en phase de finition du vin, PHYLIA® EXEL développe rapidement le volume et le gras en bouche (moins d'une semaine comparé à un élevage sur lies de  plusieurs mois). PHYLIA® EXEL contribue également à l'expression aromatique des vins : ceux-ci gagnent, en effet, en complexité, fraîcheur et fruité.

  • Avant la mise sur vins blancs, rosés, ou rouges
  • Pour optimiser l’équilibre gustatif : correction d’une acidité trop importante, de tanins tropagressifs ou d’un manque de volume
  • Pour souligner la fraîcheur et le fruité et développer la complexité aromatique
