BITARTRATE DE POTASSIUM (E 336), still referred to as cream of tarter or potassium tartaric acid is used during the cold treatment of wine. Used at doses of 400 g/hL, is serves as the seed for the crystallization of tartaric acid salts. Crystallization is thus faster and more thorough.
